our story
I stumbled across Melanzane Parmigiana in pursuit of carb and gluten-free meals to accommodate our low carb lifestyle and a gluten intolerance in our family.
As a keen home cook, I enjoy my time in the kitchen and adapted the traditional Melanzane Parmigiana recipe to meet our needs by simply removing the breadcrumb topping. Voila, a delicious carb and gluten-free meal! Later, I started adding ground beef for variety, and the meaty richness soon made the meal a firm favourite in our home.
When our travel company ground to a halt due to Covid, like many of us, I started spending more time in the kitchen. As one of my culinary experiments, I started messing with my Melanzane recipe, and after some trial and error, I was happy with the balance of flavours and satisfied that I now had a superb dish!
As Covid worsened through 2020 and lockdown deepened, one thing led to another, and Melanzane Guru was born — a home-based artisanal business where every meal is lovingly made by hand.
I've always believed that doing something excellently requires focus, and despite the temptation to expand our range of products, we maintain our obsession for doing one thing really well — creating the best Melanzane Parmigiana inspired meals around!
